| COLLECTION METHOD: | Removed in the offal department. The pituitary gland is removed from the split skull manually using tweezers or a knife, trimmed of excessive surrounding tissue and free of bone chips, and placed in a stainless steel basin bedded in crushed ice. The glands are transferred at the end of each two hour run into plastic trays for freezing into solid blocks of approximately 0.5 kg. |
